Erin's Key Lime Pie Mini Desserts

I recently attended a baby shower & saw some of my favorite people there. I used to teach all three of these beautiful girls at church. 
Now they are all grown up with families of their own. Heather {in the middle} is expecting her first baby & we were happy to be celebrating with her. I fell in love with Erin's Key Lime Pie Dessert.
Just look at her beautiful presentation! She used acrylic square mini shot glasses like this

Erin's Key Lime Pie Dessert

  • 3/4 cup key lime juice 
  • 1 can sweetened condensed milk
  • 8 oz whipped topping, plus more for garnish
  • 8 oz cream cheese, softened
  • 1/2 stick butter, unsalted, melted
  • 1 sleeve honey graham crackers, crumbled
Crush graham crackers, mix with the butter & place in the bottoms of the dessert cups. Whip the cream cheese until smooth. Add the sweetened condensed milk & mix until smooth. Add the key lime juice & mix until smooth. Allow the whipped topping to defrost & add to the cream cheese mixture until well combined. Spoon on top of the graham cracker mixture. Garnish with whipped topping & slices of lime.
