Chicken & Wild Rice Soup

If you've been reading Honey I'm Home for a while, you might be familiar with my fabulous friend Colette. She is not only one of my dearest friends - but also one of my favorite cooks! When I tasted her chicken soup recently, I just HAD to have the recipe. It is so very delicious. With her permission, I'm sharing it with you too. Thanks Colette!


Chicken & Wild Rice Soup

  • 1/4 c. butter or margarine
  • 1/3 c. flour
  • 4 c. chicken broth

Melt butter over medium heat.  Blend in flour to make roux.  Add broth all at once.  Increase heat to medium-high.  Stir constantly until mixture thickens and begins to bubble.

  • 1 1/4 c. carrots, peeled and sliced on diagonal
  • 1 1/4 c. celery, sliced on diagonal
  • 1/3 yellow onion, diced

Cook in microwave with some water until tender-crisp.

2 c. cooked wild rice
2 medium chicken breasts, cooked and cubed (I cook my chicken breasts in the crock pot - they are more tender than when boiled)
1/2 c. half & half


Add rice, chicken, half & half, and pre-cooked vegetables to soup base.  Add pepper to taste.  Heat through. Can be doubled.
