Triple Chocolate Cookies


I have shelves of cookbooks, but really only use two or three of them on a regular basis. One of my absolute favorites is the Nordstrom Friends & Family Cookbook. This cookie recipe comes from Nordy's & it is always a big hit. I like it because it is different than the usual chocolate chip recipe. Give it a try!

Triple Chocolate Cookies

  • 1 cup {or 2 sticks} unsalted butter, softened - save the wrappers!
  • 2 cups flour
  • 2/3 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 1 pound {yes - I say POUND!} bittersweet chocolate chips
  • 2 cups packed light brown sugar
  • 4 large eggs
  • 1 1/3 cups {or 8 ounces} white chocolate chips
  • 1 cup walnut halves - toasted
Toast walnuts on a cookie sheet in a 375° for 8 to 10 minutes. Let cool. For cookies, preheat oven to 350°. Grease cookie sheets with butter wrappers. In a large bowl, sift together the flour, cocoa, baking soda, & salt. Set aside. Cream the butter & brown sugar. Add eggs one at a time & mix. Melt the bittersweet chocolate chips in two batches in the microwave {heat for a few seconds, stir, & continue until melted}. Cool a bit & then add to butter, sugar & egg mixture. Add in the flour mixture & mix well. {The dough has a consistency that reminds me of thick cake mix.} Stir in the white chocolate chips & walnuts. Place on cookie sheets & bake about 10 minutes - or until a little firm to the touch - but don't over bake! Let cool on the cookie sheets 2 more minutes before removing.
