One great thing about the
chilly fall weather
is that it makes cooking much more fun.
When we want to warm up with comfort food,
I adore this easy
Corn Chowder Soup.
Here's the recipe . . .
Corn Chowder
{from michellelunt.com}
- 2 Tbsp. butter
- 1 cup finely chopped onion
- 1/2 cup chopped celery
- 3 large potatoes, peeled & finely chopped
- 4 cups chicken broth
- 2 cups frozen corn {I like white corn}
- 1/2 cup half & half
- 1 can cream of celery soup
- salt & freshly-ground pepper to taste
- pre-cooked bacon {garnishment}
- chives {garnishment}
Mmmm - it's so good!
Soups are perfect this time of the year. Throw in some nice bread to eat with it and TA DA. COMFORT !!
