What's Cooking? A Delicious Warm Chicken Salad

Today, I'm sharing one of my favorite recipes -

Warm Chicken Salad . . .

  If you are fond of lemon & asparagus--
trust me you're going to love this salad!
Here's the recipe:

Warm Chicken Salad

  • 1/4 cup olive oil
  • 1/4 cup lemon juice (from the bottle is fine)
  • garlic (I used minced garlic in the jar--maybe about 1 tsp.)
  • 1/2 tsp. grated lemon rind
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • boneless chicken breasts, cut into pieces
  • asparagus spears
  • 2 Tbsp. chopped, fresh dil
  • tomatoes, quartered
  • salad greens
  • 2-3 hard boiled eggs
For the dressing:  Wisk the olive oil, lemon juice, garlic, grated lemon rind, salt & pepper until well-blended.

Next: Heat 2 Tbsp. of the dressing in a skillet. (Save the rest for later). Add chicken & cook for a few minutes. Add the asparagus & saute' a few more minutes until chicken is cooked and a little brown.

Meanwhile: Stir chopped, fresh dill into remaining lemon dressing. Add tomatoes to skillet to slightly warm before serving. Line platter with salad greens, top with chicken, asparagus, & tomatoes. Place sliced eggs on top. Drizzle dressing over all. Garnish with sliced lemon.

Serve right away!

  2. I'm definitely going to give this salad a try... I'll take anything that's warm these days! I think it's supposed to snow again tomorrow for us, so this will be perfect. Thanks!
