We are enjoying making
Jeff's favorite foods for him.
He loves this dessert.
We call it "Erin's Cake"
for the girl who gave me
the recipe.
But you could also call it
"Raspberry Cream Cheese" Cake.
Here's how to make it:
Bake a white cake mix as directed,
(except use 3 whole eggs)
in a greased jelly roll pan & cool.
(Unbaked cake in what I call a jelly roll pan)
Next, mix 8 oz. of softened cream cheese
with 1 cup powdered sugar.
Fold 8 oz. Cool Whip.
Spread over cooled cake.
Prepare "Danish Dessert" according to the
pie glaze directions on the box.
Cool & add frozen or fresh raspberries.
Spread on cream cheese layer.
Serve chilled.
