I sure enjoyed spending
Halloween with my
sweet granddaughter.
Since I didn't want
candy to be the only
thing in her tummy,
we made minestrone soup.
Nellie is only three years old,
so even though she loves to "cook" with me,
we split up the duties like this:
(so she wouldn't get burned)
Grammy: Saute'
1/2 chopped onion, & 1 tsp. garlic
in about 2 Tbsp. olive oil
(We like this kind of garlic - it's easy!)
Nellie: Chop
up 2 small zucchini & 2 medium
yellow squash in this neat choppy thing.
It makes a big noise & sometimes if
I have to I say, "EEE!" while I push on
it to make it chop up the stuff.
Grammy: Add & saute'
the zucchini & squash with
the oil, onion & garlic.
Saute' until softened, but not
too mushy.
Nellie: DUMP!
While your Grammy is cooking the
squash, dump this stuff into a
COLD crock pot:
2 cups frozen corn
1 - 15 oz can tomato sauce
1 can white beans
5 chicken bouillon cubes
(I unwrap them myself!)
4 cups water
1 can diced tomatoes (don't drain!)
the juice from another can of diced tomatoes
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. celery salt &
1/2 tsp. white pepper
Nellie: Pick
some fresh parsley
& fresh basil from your
Grammy's garden & let
her cut it up for you.
Then put that in the
crock pot too.
Grammy: Add
the sauteed veggies to
the crock pot.
Make sure your little cook
knows you're turning the crock
pot on now & it will be HOT
from now on--then
put the crock pot out of reach.
Simmer in crock pot for a couple of hours
& serve with fresh parmesan cheese.
